Spring - Celery

How to select for best flavor:

Buy bunches of celery that are well-formed and fresh-looking. Avoid bunches that have woody stalks, wilting or yellowish leaves or stalks that are limp and flexible.

 

Peak of the season:

Celery is available all year round, but the price fluctuates greatly. May is the best month to buy celery. September is the worst.

 

Nutritional value:

Celery is a good source of vitamins A and C, calcium and potassium. It is also a great source of dietary fiber. One stalk has only five calories, no fat, no cholesterol and only 35 mgs. of sodium.

 

General information:

Keep celery in the refrigerator and use it quickly for the best flavor. Don’t throw the leaves away. They add great flavor to soups and they are a very good garnish for meats and poultry. The ancient Chinese brewed tea from celery leaves as a cure for indigestion.
